Part 2: The quality of coffee in Nui Xanh
Conduct preliminary processing, farm of Mr.Tony with tree age of 20 years old, which is made organic 3 years, sugar level of coffee cherries with average 20% and fermentation 18 hours (no add ferment), Yellow Honey process; farm of Ms. Ngan has tree age of 8-10 years old, which is grown in the shade of tree, conventional fertilizer and pesticide (no specific parameters) Fully Washed process (fermentation 18 hours and no add ferment) and Natural process.
We have the result:
- In general, Catimor Nui Xanh has a higher clean than other areas of Cau Dat that we have tried before.
- We didn't find out the taste negative like potato, earthy, chemical,...
- Sour (acidity) is the taste that we are really "bored" when roasting Cau Dat coffee in general for espresso because the sourness of this region tends to be harsh of lemons, vinegar and unpleasant bitterness. Fortunately, the coffee samples that we processed had acidity that was neat and a moderate tendency.
About flavour, Nui Xanh coffee has characteristic flavours of stone fruits, black berry, sucrose, chocolate, a bit of wood and grain are processed by natural method. Whole, the taste of Tony's farm is particularly outstanding and rich. I should think the farm is looked after organic method.
- In terms of defects & quakers, our samples, specially yellow honey of Tony's farm although organic has been done, it appears "shell" and mutation bean error, it is thought that the previous fertilization process to take too many drug and fertilizer, the coffee tree has not yet grown stably.
We came to the following conclusion: coffees in Nui Xanh are relatively good quality, varieties of beans and suitable geographical conditions to develop friendly coffee under forest capony. In the next years, if the test results of new coffee of varieties in this area is successfull, which bring a great premise for us to hope for a new famous high-quality area, named Nui Xanh. In addition, during the observation process, although there are no specific statistics, the very large coffee growing area here, the coffee output is very large, but all big companies buy coffee cherry for preliminary processing, the reason why this Green Mountain area is not well known. If there is a program to support farmers here to prepare their own high-quality coffee, the development of a coffee brand in the Green Mountain area to provide the market with a new choice of Arabica coffee will contribute to creating an interesting part for Lam Dong coffee market in particular and the country in general.
